Extra virgin olive oil of superior category that is the exclusive result of the first cold pressing of organically grown olives from our farm in our olive press. The olive grove is organically cultivated in a coastal area sheltered from seasonal excesses that enjoys an ideal microclimate for olive trees. Harvesting is done by hand from the trees, using air combs. Our oil is produced directly from the fruit in a completely natural way, without chemical manipulation, and is therefore 100% pure olive “juice,” cold pressed, with absolutely perfect taste, high nutritional value and very low acidity.
Our extra virgin olive oil, golden yellow in color with green highlights, is lightly scented and has a delicate aroma with an aftertaste of almonds and pine nuts; it is a gentle oil that goes well with all dishes of local Veronese cuisine.
Freshly pressed quality extra virgin olive oil should be bitter and spicy.
Bitter is the elemental flavor characteristic of oil obtained from green or freshly pitted (ripe) olives, which are rich in phenolic compounds. Bitter comes from the presence of valuable substances – antioxidants – that protect the oil from oxidation as well as the cells of the human body, inducing a number of favorable health effects.
Pungency is characteristic of olives rich in phenolic compounds; the healthier the olives, the richer they are in polyphenols: it is precisely polyphenols that are responsible for the spicy sensation in the throat.
Since oil is a living product that tends to change as it ages easily, we recommend consuming it within 24 months of production, keeping it at a constant temperature, possibly between 12 and 15 degrees, in the dark to avoid oxidation processes, tightly closed so that it does not absorb other odors in the environment.
